As in each year, from January to March, the grapevine prune is expected. This is a fundamental process for the plant since the pruning allows the grape to be placed in the best position to balance the growth and the production stages.
The weather plays a central role during this phase; in fact, the bad water could cause delays – as during these days – postponing the end of the intervention at when the buds will be opening, risking a potential loss of them during the last mechanical interventions. When the weather permits, the pruning requires a total of 40-45 days.
The Tenuta di Castelfalfi has chosen the spurred cordon cultivation system: during the growth process of the plant until the adult phase, the trunk is made up of a 90° bended cordon that brings cordons on its horizontal top, producing annual fruiting branches. This system requires a great effort especially during the first three years of preparation, reason why the Azienda Agricola of Castelfalfi is supported by external specialized companies.
To obtain the perfect pruning, generally electric shears are used – equipped with battery carried behind the back – while, for the first years of training, operators use pruning shears.
The end of March and the first days of April will bring to the born of new flowers that will blossom two months after the vegetation, showing little grapes. The initial period of maturation is called “veraison”, when the green grapes gradually change colour, taking a progressing amaranth nuance.
