This week we want to recommend you a typical Tuscan recipe: chicken liver crostini. The Tuscan cuisine makes extensive use of entrails despite it is not an… easy-to-digest kind of food! The Tuscan Crostini, instead, thanks to the perfect combination of ingredients with the livers, allow all people to taste a perfect dish for any occasion!
The necessary ingredients for four people are:
350 gr. chicken livers
50 gr. pickled capers
½ cup of broth
½ glass of Vinsanto wine
1 red onion
2 or 3 anchovies in oil
Extra-virgin olive oil
First of all, it is necessary to clean the livers removing the gall bladder, then wash and dry them. In a pan brown the chopped onion in oil and, while let it browning, add the livers. Let them cook on a low heat, adding the Vinsanto and, if necessary, some water.
Once cooked, you can decide to mince it with the vegetable mill or the grinder, depending on the consistency you prefer, without draining them, but saving the liquid and adding some oil. At this point, mix anchovies and capers, until the anchovy has melted completely into the paste.
Finally, your crostino will be ready. Remember to serve it hot, combined with Tuscan roasted bread in order to fully taste every flavor!
