Created by award-winning international artist and designer Henry Chebaane, this theatrical space invites you to give way to your senses. Behold firsthand the masterful expertise of our chefs as they prepare to take your taste buds on a journey inspired by international flavours yet rooted in Tuscan tradition. The restaurant takes its name from the translucent green stone which the Etruscans, the ancient inhabitants of Tuscany, called the ‘gem of the sun’. An allusion to the vineyards and olive groves that characterise the surrounding landscape and its centuries-old heritage.

The interior design makes use of a rich, elegant palette of regional materials in soft terracotta, copper, oak and bronze tones as well as various shades of grains, grapes and olives, instilling a feeling of calm curiosity as you explore the dishes. Olivina features a wine room, salumeria, coffee bar and bakery. Embark on a journey through a cornucopia of flavours and aromas.

Il Rosmarino steakhouse and pizzeria is an ode to the time-honoured tradition of homely Tuscan cooking. Here, simplicity becomes sublime and the understated decor allows the delicate balance of humble yet heavenly flavours to shine. On the menu: succulent Chianina beef alla Fiorentina, wide ribbons of handmade pasta entwined with rich, velvety sauces that echo the changing seasons, and the crisp perfection of wood-fired pizzas.

We use seasonal local ingredients selected by our chef Matteo Cervini to craft refined flavours that harmonise with the local landscape.

The wood-fired pizzas are finished with a delicate drizzle of organic extra virgin oil produced on the Castelfalfi estate. From humble pappa al pomodoro elevated to delight the most discerning of palates to handmade pappardelle with a richly indulgent wild boar ragù, each season our chef creates dishes that let the flavours of Tuscany sing in harmony. Pair with a glass of our organic estate Poggio alla Fame wine.

A symphony of ancient charm and modern luxury, Castelfalfi’s Country ClubHouse restaurant is housed in the tastefully restored Poggionero farmhouse. With its weathered stone walls imbued with centuries of wisdom, it is the perfect haven to relax and recharge after a round of golf. The view stretches for miles, a timeless tableau of Tuscany’s beauty, with vineyards weaving through the landscape, interspersed by the slender forms of cypress trees reaching skywards.

Inspired by Tuscan tradition, the range of hearty dishes and lighter bites offers something for everyone, golfers and non-golfers alike.

The wine list is curated by our head sommelier with a range of national and international wines to mirror the quality of the food and the surrounding scenery.

The dreamy view from Ecrù changes with the seasons, from autumnal morning mists that drift across the landscape to hazy mirages under the hot Tuscan sun. The medieval castle’s elevated position allows for both privacy and privileged views across the estate - the ideal place for romantic dinners, marriage proposals and milestone celebrations. The use of traditional materials in the interiors such as wood, stone and terracotta infuse your experience with Tuscan identity. Just like the gentle hues of the sun-blessed countryside echoed in this charming environment, the cuisine takes inspiration from traditional Tuscan fare, elevated to new levels of sophistication.

The restaurant is managed by chef Michele Rinaldi from Bergamo. A pupil of Italy's most famous chef, Gualtiero Marchesi, at La Rocca head chef Rinaldi offers traditional cuisine based on Mediterranean meat and fish. His extensive experience gained in famous restaurants in Italy and further afield has informed his signature style, which uses the highest quality ingredients to craft simple but delicious dishes.

Castelfalfi’s La Rocca restaurant is the perfect setting for private dining and events – a place where time dissolves as the castle walls murmur secrets of bygone times and you indulge in a fairytale feast for the senses.

As the sunlight dances across the clear blue water of the pool, retreat under the dappled shade of the olive trees to enjoy a refreshing drink or light lunch at Giglio Blu Pool Bar & Restaurant. Our summer-infused menu includes salads and grilled dishes, with a choice of vegetarian, vegan and low-carb meals.
