Everything starts off with home-made sourdough prepared and left to stand for more than twelve hours before use. The Easter Colomba belongs in the category of large leavened products such as the Panettone and the Pandoro, and for this reason its dough must be kneaded for a long time. This is where the magic of the Tuffante – a state-of-the-art mixer in the service of tradition – comes into play. It ensures a greater oxygenation and total uniformity of the delicate dough. Once ready, this dough is kept in a special leavening chamber at a temperature of 28-30 celsius degrees with a humidity of 70%. For an authentic flavour, no preservatives are used but only genuine and natural ingredients from Tuscany and its surroundings.

In the end, the Colomba is triumph of fragrances that hide the delights hidden inside: orange peel or chips of dark chocolate.
