The restaurant takes its name from the translucent green stone which the Etruscans, the ancient inhabitants of Tuscany, called ‘gem of the sun’. An allusion to the vineyards and olive groves that characterize the surrounding landscape and its centuries-old heritage.

The interior design makes use of a rich, elegant palette of regional materials in soft terracotta, copper, oak and bronze tones as well as various shades of grains, grapes and olives, instilling a feeling of calm curiosity as you explore the dishes. Olivina features a wine room, salumeria, coffee bar and bakery. Embark on a journey through a cornucopia of flavors and aromas.

Il Rosmarino - trattoria and pizzeria - is an ode to the time-honoured tradition of homely Tuscan cooking. Here, simplicity becomes sublime and the understated decor allows the delicate balance of humble yet heavenly flavors to shine. On the menu: succulent bistecca alla Fiorentina, wide ribbons of handmade pasta entwined with rich, velvety sauces that echo the changing seasons, and the crisp perfection of wood-fired pizzas.
