Surrounded by olive groves that stretch as far along the hills as the eye can see, Castelfalfi’s history is intimately linked to olive oil production.
Today, we still passionately cultivate 10,000 olive trees of the most common varieties found in Central Tuscany, which we use to produce organic extra virgin olive oil, Toscano IGP. Our traditional cold pressing process means that the estate’s extra virgin olive oil boasts superb nutritional and organoleptic properties.
Because we carry out the production process entirely at our olive mill, we make small quantities of organic monovarietal oils when the season allows. Discover them all.
In addition to our high-quality wines and extra virgin olive oils, we also produce digestives and spirits, including gin, vermouth, an amaro and two grappas at Castelfalfi.
We create our products by carefully selecting, tasting and combining aromatic herbs. Our bar manager then skilfully uses them to craft exquisite concoctions.
The renewal of the Castelfalfi image, coming from a deep awareness of its historical heritage, continues with a project started last season, together with the artist Gianni Lucchesi.
