Castelfalfi wines are born in a place where nature sets the pace and people listen. Among rolling hills, woodlands, and mirrors of water, 25 hectares of organically farmed vineyards express the authentic soul of a unique territory between Florence and Pisa. Each parcel tells a different story, respected and enhanced in the cellar through a thoughtful, regenerative approach. The result is elegant, balanced wines, deeply rooted in their place of origin.
Historically surrounded by olive groves stretching across the surrounding hills, the village of Castelfalfi boasts a long-standing tradition of olive oil production. Today, we passionately cultivate 10,000 olive trees of the most typical Central Tuscan varieties, producing a fully organic IGP extra virgin olive oil. Thanks to cold extraction in our own mill and the expertise of our millers, the estate’s EVO oil stands out for its exceptional nutritional and organoleptic qualities.
Castelfalfi has introduced a refined selection of bitters and distillates that embody the authentic spirit of the region. Gin, vermouth, and amaro can be enjoyed on their own or as key ingredients in our Signature Cocktails, crafted by our bartenders. Their distinctive aromatic profile comes from Tuscan herbs, selected and distilled with the expertise of master distillers.
Castelfalfi Wildflower Honey is produced in the unspoiled valleys of Central Tuscany by Apis Mellifera Ligustica, the region’s native honeybee. Organic beekeeping and a bee-friendly approach allow the bees to thrive naturally, resulting in a honey with a rich flavor and intense aroma, capturing the authentic tastes and scents of Castelfalfi.
History, authenticity, and modernity define the identity of Castelfalfi. Its logo, combining the Etruscan Horse and the mythical Pegasus, symbolizes the dialogue between past, present, and future. This vision inspires our Special Projects: limited-edition, finely crafted bottles created in collaboration with artist Gianni Lucchesi, renewed each year to celebrate the timeless treasures of Castelfalfi.
